Slow-Roasted Tomatoes

Slice 6 Roma tomatoes lengthways.  Lay on baking paper-covered oven trays.  Drizzle with a little olive oil.  Sprinkle with chopped basil and coarse sea salt.  Cook in a moderate oven for 50 minutes to an hour.  The time will depend on how thick the slices are.  Allow to cool and store in an airtight container in the fridge for up to 3 days.
